Yes! Just as with most of our cake recipes (from Almond Cake to Orange Cake , Italian Cream Cake and more), these layers freeze perfectly. However , I recommend holding off on the lemon simple syrup until after the layers have been thawed and the cake is being assembled. To freeze the cake layers , simply bake, cool, and wrap each layer tightly with plastic wrap followed by foil. (We often freeze them while still slightly warm.) For more stability, we often place each cake layer on it's own foil-wrapped cardboard cake circle before wrapping. The cake layers can be frozen for up to three months ! They will taste as fresh as the day they were baked. To thaw, move the layers to the kitchen counter (still wrapped). We like to allow condensation to form on the foil before unwrapping. We usually wait about 30-45 minutes. Then, unwrap and thaw to desired amount for assembling and decorating.

Yes, because of the fresh strawberries and lemon cream cheese frosting, this cake needs to be refrigerated. We recommend storing in an airtight container or a cake dome.

However, for best flavor and texture, remove the cake from the refrigerator a couple of hours before serving. This will allow it plenty of time to warm and soften.
