    Springtime Bunnies~ A Cake Tutorial

    Adorable Springtime Bunnies Cake Tutorial by MyCakeSchool.com! Free Tutorial, and perfect for Springtime and Easter Gatherings and even baby showers! My Cake School online cake tutorials, recipes, videos, and more!

     

    Today's Springtime Bunnies Cake is just too cute not to make at least once! It's the perfect choice for Easter and springtime gatherings, and is easy enough for all skill levels of cake decorating!

     

    Let's get started!

    First, we need two bunnies for our design made from either gum paste or fondant with tylose powder kneaded into it.

    After searching for and finding a bunny cookie cutter in my "springtime cutter bin", I  realized that it looked nothing like a bunny-- or if he was a bunny, he was horribly underfed.  Nobody wants a skinny bunny on their cake!   I took matters into my own hands & decided to draw a bunny template of my own.       Here's my template.....big bunny !

    Next, I rolled out my gum paste. (You can also use fondant but I still prefer to knead in a little tylose powder to strengthen it & speed up the dry time.) --  I rolled it to ¼" thickness & cut out my bunnies.

    Let your bunnies dry for a few days until firm.  Then flip over one of them and attach a lollipop stick to the back with a strip of lightly dampened fondant.  It will be ready to use within 30 minutes.

    Let's add some cute designs with royal icing! (You can also use a crusting buttercream for the piping, you just have to be careful not to smear it when handling. Royal icing dries much firmer.

    Now for the best part... the cake!!   I frosted our cake with Fluffy Vanilla Buttercream,  used my spatula to get it pretty smooth, and then decided to go back and "mess it up" --only, in a pretty way! I just tapped the end of my spatula all over the icing until it had a nice, fluffy, almost coconut look!

    I added a few fondant flowers, attached a little bow & fondant flower to their necks with a dot of royal icing, and at the last minute, popped on a couple of flat, fondant eggs that I had dried earlier for another project  (with royal designs.) --

    All in all, it is a simple cake with really sweet results!

      Hi Mellisa. I want to make a carrot cake for Easter. Can I make this same design using a carrot cake and cream cheese frosting?

      Hi Dina, Yes, you could use a cream cheese frosting, it will not be as white as our pictured cake, but with the pink bunnies I think it will be very cute. With cream cheese frosting remember to use full fat cream cheese. Do not use reduced fat or cream cheese in the round tubs, as it will make your cream cheese too soft. Do not soften the cream cheese just cut into approximately 1 inch pieces and add to the butter that has been mixed. It is best if you are using a heavy mixer such as a KitchenAid. If you are using a hand mixer, you will need to let the cream cheese soften slightly. The cake will need to be kept refrigerated so you can take the cake from the refrigerator about an hour before serving to warm slightly and add the bunnies. We have refrigerated ours with the fondant/gum paste bunnies with no problem. If your experience with fondant pieces have been good, you could do the same. Happy Easter

      Hi Cynthia- the bunnies are made from gum paste and so they are just for decoration. (Gum paste dries very firm). If you want the bunnies to be edible, you could use the same template to cut out sugar cookie bunnies and decorate with royal icing or buttercream ;0)
