Q: <strong>Can Banana Cake Layers be Frozen?</strong>

Yes! Just as with the majority of our cakes from lemon cake to orange cake , strawberry cake and more, these cake layers freeze perfectly. To freeze, we like to bake our cake layers, allow to cool almost completely, and then place each layer on it's own foil-wrapped cake cardboard. We then wrap each layer in plastic wrap followed by aluminum foil . They will stay fresh in the freezer for three months . If you plan to only freeze them for a couple of days, double wrapping the layers in plastic wrap is all that is needed. To Thaw , remove the layers from the freezer, still wrapped and allow to thaw on the kitchen counter. As condensation forms on the wrapping (after around 30 minutes), it is fine to remove and continue to thaw to desired amount. (Some decorators prefer to assemble their cakes while the layers are still partially frozen as they are less fragile.)

Yes, this Banana Cake needs to be refrigerated because of the banana cream filling and cream cheese frosting.

However, for best taste and texture, remove from the refrigerator a couple of hours before serving. This will allow the cake to warm to room temperature and soften.

In addition to the banana pastry cream filling, there are several other fillings and frostings that go perfectly with banana cake! Check out the easy (pudding) vanilla cream filling from our Banana Pudding Cupcakes!

Peanut Butter Cream Cheese Frosting and Peanut Butter Buttercream are delicious options as well!

Finally, chocolate buttercream or cinnamon cream cheese frosting would work really nicely too!

Is there an Easy Banana Cream Cake?

You can easily change up this recipe to a simpler version by substituting our Easy Banana Cake Mix Recipe for the cake layers.

You can also use the EASY Vanilla Cream recipe that we used in our Boston Cream Pie recipe! This is a combination of instant vanilla pudding and heavy cream. (You can add a little banana extract if you'd like- or you could even use banana instant pudding. I've never tried the banana pudding flavor though.)
