If you are only freezing the layers for a few days, double wrapping in plastic wrap is enough protection.

To Thaw: Move the wrapped strawberry layers from the freezer to the kitchen counter. Leave the wrapping on for about 45 minutes before removing. This gives the condensation plenty of time to form on the wrapping rather than the cake itself.

Unwrap and continue to thaw to desired amount for assembling the cake. (Some bakers like to assemble their cakes while the layers are partially frozen as they are less fragile.)
