Whipped Vanilla Buttercream
This is a variation of Whimsical Bakeshouse's house buttercream. It is a lighter texture than my "Classic Vanilla" or "Fluffy Vanilla" frostings. It is also less sweet. **Keep in mind that this is a NON-Crusting buttercream. Enjoy!
6 cups confectioner's sugar (1 ½ lbs)
½ teaspoon popcorn salt (unflavored)
3 tsp. flavoring (I've used 2 teaspoon vanilla plus 1 teaspoon lemon or Magic Line brand Creme Boquet)
¾ c. boiling water
2 ¾ c. high-ratio or regular vegetable shortening
1 ½ sticks unsalted butter that has been sliced into 1 inch pieces and chilled slightly

In a mixing bowl, stir together the sugar, salt, and flavorings.
With a whisk attachment, add and whip at low speed:
¾ c. boiling water--whip until smooth & cool.
Add the following and whip until smooth:
2 ¾ c. shortening
1 ½ sticks unsalted butter that has been cut into 1 inch pieces, slightly chilled. (6 oz)
Increase the speed to medium- high and whip until frosting is light and fluffy, and has doubled in volume (10-20 minutes)
Yield: 9 cups of frosting. Store up to two weeks in the refrigerator (tightly covered).
