Congratulations on your book!
Pimento cheese has become the new staple in my fridge. My go to after work, my go to whenever I want cheese and spice. I love to mix and match cheeses and peppers. My first introduction to Pimento cheese was store bought yucky but then an elderly lady made some for me from scratch and I was hooked! I had a coworker sell it to make money, so I bought some of his, and my family went nuts over it. So now, we make it all the time. Talk about amazing grilled cheese sandwiches, yummy snacks on celery and crackers, or just take the finger and do the ‘swipe” thingy and have at it. When it is good, it is GOOD, ya’ll!
The BEST is the barbecued spare ribs!!!! My family devours them.

Hi, I’m Brazilian so my knowledge of the southern cooking is limited, but I do love a good old Mac & cheese and fried chicken with that special seasoning! This buttermilk fried chicken sounds delicious too!
It is hard to choose just one…I think I will go with cornbread.
I immigrated to the United States when I was 13. My aunt married an American military man, who was stationed at the Lages Air Force base in the Azores islands, Portugal. We were lucky to be sponsored by my aunt and uncle. Uncle James was originally from Alabama. It was through him that I learned and fell in love with southern American food. It grabbed me at first bite and I’ve never cooked or baked the same since. I love buttermilk fried chicken, but my first love are biscuits. The smell it emits in my home reminds me of my beloved late aunt aunt and uncle. I make them every once in a while for my husband’s family today and they can’t get enough of it.
Living in Tennessee in the mid nineties I loved Fried okra and of course the fresh Southern Peach cobblers from this restaurant Calle Po Folks. Hmmmmm I miss that Southern cooking.
If only bacon grease was a dish… I love cook with bacon grease. I use it to season everything, even my homemade buttermilk biscuits. So it’s only fitting my favorite southern dish is breakfast: fried eggs (fried in bacon grease), bacon (fried in bacon grease) and buttermilk biscuits (made with bacon grease).
